1 can black beans, rinsed
1 c. frozen corn
1 small onion, small dice
1/2 c. carrot, small dice
1 can Rotel
1 can tomatoes, diced or crushed
1/2 to 1 pkg. ranch dressing mix (use 1/2 if watching sodium)
1 tsp. cumin
1 Tbsp. chili powder
2 chicken breasts, frozen
1 pkg. cream cheese
Optional toppings:Cilantro, jalapenos, cheese, sour cream, tortilla chips, lime juice.

Directions:
Directions:
Mix all ingredients except chicken and cream cheese in crockpot. Push in frozen chicken breasts until covered. Place block of cream cheese on top. Cover and cook on low 8 hours. Shred chicken. Hint: To shred chicken I just use a potato masher. Stir together. Can top soup to suit tastes. Use fresh chopped cilantro, jalapenos, shredded cheese, sour cream, tortilla chips and/or squeeze of lime.

The whole family really enjoys this soup. Paul and I add our own hot sauce and jalapenos to spice things up. The girls like to add more sour cream and cheese to theirs.
