1 box manicotti noodles
1 ½ lb ground beef or turkey
salt & pepper
3 cloves garlic, minced
1 medium onion, chopped
1 green pepper, chopped
1 can green chilies, 7 oz., undrained
1 24 oz container sour cream (light sour cream works just fine), ¼ reserved for end
Large bottle Pace picante sauce, medium
1 bag shredded sharp cheddar cheese
3 green onions, chopped

Directions:
Directions:
Brown meat with onion, green pepper, garlic. Season with salt, pepper, other seasonings to taste. Drain meat mixture and place in bowl. Mix ¾ container of sour cream and green chilies into meat mixture. Cook noodles according to package directions. Drain. Lay noodles on a baking sheet greased lightly with EVOO to cool. Spread thin layer of picante sauce into bottom of 9x13 glass pan. Stuff each noodle with meat mixture. Place in pan on salsa. Cover noodles with rest of picante sauce. Cover with shredded cheddar. Bake covered 45min @ 350. Remove foil. Top with remainder of sour cream and chopped green onions. Re-cover with foil. Let stand for several minutes. Serve with salad and garlic bread. Can also make into lasagna using no-boil noodles. May need additional salsa to cook lasagna noodles.
