1½ package of corn tortillas, cut into ¼" strips
2 lbs.breakfast sausage (I like one regular, one hot)
½ lg sweet onion, chopped
15 eggs
1 c. milk
2 tsp. ground cumin
½ tsp. salt
½ tsp. pepper
½ jar salsa (I like medium Pace Picante)
3½ c. + handful sharp cheddar/Monterey jack mix cheeses
Ground paprika
Cilantro, chopped (optional)
Sour cream (optional)

Directions:
Directions:
Brown sausage & onion. Drain. Mix eggs & milk together like scrambled eggs. Add cumin, salt, pepper & salsa, mix with whisk. Butter/spray 9x13 casserole dish. Layer 1/2 the tortilla strips, 1/2 sausage, 1/2 the cheese, and pour 1/2 the egg mixture over it. Repeat. Add handful of cheese across top and sprinkle with paprika. Refrigerate overnight. Get casserole out of fridge. Preheat oven to 350º. Bake uncovered 50-60 min until set and toothpick in middle comes out clean.
Serve with salsa and sour cream. Can sprinkle cilantro on top.
