Poor Man's Lobster (Tilapia) Recipe

1 lb. tilapia fish fillets
2 qts water
1½ Tbsp salt
2 Tbsp cider vinegar
4 bay leaves
1 stick butter
1 tsp. ground thyme, heaping

Directions:
Directions:
Mix salt, vinegar, and bay leaves in water in large pot. Add fish fillets, cover. Bring to boil, cooking until fish turns white/opaque, approx 15 min. In separate sauce pan, melt butter until it starts to bubble. Add ground thyme and cook until golden brown. Gently place fish on platter and pour butter on top or put butter in individual small bowls for dipping fish into butter.
Best served with a side of wasabi mashed potatoes. Make potatoes as usual, adding in 1-2 Tbsp wasabi paste. OMG, yum!
