1 c. sugar
½ c. light corn syrup
⅛ tsp. salt
1-1½ c. roasted, salted peanuts
1 Tbsp butter
1 tsp. vanilla
1 tsp. baking soda

Directions:
Directions:
Butter large cookie sheet.
Combine sugar, syrup and salt in 2 qt casserole or mixing bowl. Microwave on high 5 minutes. Stir in nuts. Microwave 2-5 min, stirring after 2 & 4 minutes, until syrup and nuts are lightly browned. Stir in butter, vanilla, and soda until light & foamy (this will happen quickly!). Spread to 1/4" thickness on buttered cookie sheet. For thinner peanut brittle after 3-5 min pull or stretch. Cool. Break into pieces.
Don't walk away from nuts/syrup in microwave, they can burn. Also, don't use anything that can melt. It is hot a molten lava and can melt bowl/utensil (learned that the hard way).

This recipe was 30+ years old when I got it in 2004. Borrowed from my old boss, Kim Enyart. It is quick & easy to make. Does not stick to your teeth! I never use a candy thermometer and it turns out great.
