1 c. butter, softened
1½ c. packed brown sugar
1 tsp. baking soda
1 tsp. ground cinnamon
½ tsp. salt
2 eggs
1 tsp. vanilla
1½ c. all-purpose flour
3 c. regular or quick cooking oats
1 c. raisins

Preheat oven to 350º. In large mixing bowl beat butter with an electric mixer on med/high speed for 30 seconds(or do this recipe in Kitchenaid stand mixer). Add brown sugar, baking soda, cinnamon, and salt. Beat until combined, scraping sides of bowl occasionally. Beat in eggs and vanilla. Beat in as much of the flour as you can with mixer. Stir in remaining flour, oats, and raisins. Drop dough by rounded teaspoons or tablespoons 2 inches apart onto ungreased cookie sheet or parchment paper. Bake 8-12 minutes, until edges are slightly brown and centers are set. Cool on cookie sheet for 2 min. Transfer to wire rack, cool.

Recipe borrowed from our neighbor Steve Bayes. He would give us these at Christmas. They remind me of Grandpa Leo's oatmeal raisin cookies he would make. Grandpa never measured so you never knew how his cookies would turn out. I always admired that a man of Grandpa's generation cooked and baked!
