1 Tbsp. olive oil
3 c. cooked rice (preferably Rice Land long grain, I also use jasmine rice sometimes)
1 lb. ground breakfast sausage (I do half regular, half hot)
2 c. chopped onions
2 c. chopped celery, leaves included
1¼ stick unsalted butter, divided
3 eggs, slightly beaten
2 Tbsp. flat leaf parsely
2-3 Tbsp. poultry seasoning
1 Tbsp. Cavender's greek seasoning
1 tsp. salt
1 tsp. pepper
(Adjust seasonings to taste)

Rice: Saute 1½ c rice in 1 Tbsp of olive oil. Make sure all is coated by oil. Saute until rice becomes fragrant, don't brown. This step keeps rice from sticking together. Add 3 c. water. Bring to boil, stir, put on lid. Reduce heat to low and cook for 20 min. Do not take off lid during cooking!! Cool. May make rice day ahead.

Saute onions and celery in stick of butter until soft. About 10 min.

In a large bowl, combine rice, raw sausage, sauteed veggies/butter mix, and spices. Add eggs and parsley. Blend. May need to use hands to incorporate sausage.
Place in buttered 9x13 pan. Dot top with butter. Bake uncovered @ 350º for approx. 1½ hours, until browned and puffed.

Recipe "stolen" from my foodie friends, Melissa & Dennis Foreman. Melissa grew up in Arkansas and her family farmed rice (her family still farms rice). I like this dressing better than cornbread dressing! Shhhh...don't tell anyone. :)
