Directions:
Directions:
Cut tops to ½-inch; do not remove tails. Wash thoroughly and place in large saucepan. Add water to cover; cook until soft but not mushy. Save water of cooked beets. Cool. Peel off skins, tops and tails. Cut into slices or dice beets. Combine 2 c. sugar, 2 c. water from cooked beets and 1 c. vinegar. Bring syrup to a boil; add beets and bring to a boil again. Place beets and juice in jars to seal.
