** Have all utensils grease free **

Option 1
4 egg whites (pasteurized) you may prefer to use meringue powder 8 tbsp
5 C. sifted icing sugar
1 tsp cream of tarter
¼ tsp salt
2 tsp almond extract

Yield 4 Cups

Option 2
3 tbsp meringue powder
6 tbsp hot water (for stiffer icing use less water)
few drops of almond or vanilla flavouring
4 C. sifted icing sugar

Combine and beat the 1st four ingredients for 10-15 min, add almond extract.
Check for desired stiffness.

Option 2

Blend at low speed for 1 min then at high speed for 5 + min check for stiffness
Gradually add 4 c sifted icing sugar

Keep icing covered with a damp cloth while using.

Can store in air tight container
