¼ C melted butter
¾ C g. sugar
1 beaten egg

1 C mashed bananas aprox. 2 large or 3 med bananas - dark bananas make the best muffins
1 ½ C pastry flour or AP flour less a tbsp
½ tsp salt
¾ tsp b. soda
½ tsp b. powder

Preheat oven to 325 - Cook time 15 Min
Grease muffin tins.

Cream together the butter sugar and egg
Add bananas and mix well
Add the sifted dry ingredients to the banana butter mixture.
Scoop into greased muffin tins
