1½ c sugar
¼ c flour
Dash of salt
2 c milk
4 eggs slightly beaten
1 quart heavy cream
¾ tsp green food coloring
2 tsp peppermint extract
1 square semi sweet chocolate finely chopped

Directions:
Directions:
Combine sugar, flour and salt in a medium size saucepan; add milk gradually. Cook over medium heat, stirring constantly, until mixture thicken and bubbles. Remove from heat. Stir ½ of the mixture slowly into beaten eggs in a medium size bowl; stir back into remaining mixture in saucepan. Cook stirring 1 minute. Remove from heat, pour into bowl; cool. Stir in cream, coloring, extract, chill. Pour into a 4-6 quart freezer can; freeze. Fold chocolate into soft ice cream.
