2 c sugar
¼ tsp salt
3 tbsp flour
3½ c milk
6 egg yolks, slightly beaten
2 tbsp grated lemon rind
⅔ c lemon juice
3 c heavy cream

Directions:
Directions:
Combine sugar, salt and flour in a large sauce pan; add milk gradually. Cook over medium heat, stirring until mixture thickens and bubbles. Remove from heat. Stir ½ the mixture slowly into beaten egg yolks, stir back into remaining mixture in saucepan. Cook, stirring constantly, 1 minute. Remove from heat, pour into large bowl; cool. Add lemon rind and lemon juice. Stir in cream, chill. Pour into a 4-6 quart freezer and freeze. Pack into plastic containers and freeze until firm.
