2 T + 2t. safflower oil
4 medium shallots, diced 1/4”
1/3 c. diced peeled ginger
2 T. curry powder
1 c. dark brown sugar
2 1/4 lbs. rhubarb, trimmed and cut into 1/2” pieces
15 medium red radishes, halved and sliced

Directions:
Directions:
In a medium saucepan, heat the oil over medium heat. Stir in the shallots, ginger, and curry powder. Cook, stirring for about 6 min. or until the shallots are limp.
Stir in the brown sugar, rhubarb, and radishes. Cover pot and raise the heat to medium-high. Cook stirring occasionally, for 8 min. or until the rhubarb is tender, but not mushy.
