2 Tablespoons Olive Oil

1 Pound of Shrimp, uncooked, peeled and deveined

¼ teaspoon salt

1 teaspoon paprika

1 teaspoon Italian seasoning

4 medium tomatoes, chopped in large cubes

5 garlic cloves, minced

8 strips of bacon, cooked, drained of fat and chopped

1 cup half and half

1 cup Parmesan cheese, shredded

6 ounce fresh spinach

10 ounce penne pasta

Optional:
½ cup parmesan cheese, grated to serve over dish
¼ to ½ teaspoon red pepper flakes (NOT MORE)

1. In a large skillet on high heat, heat 2 Tablespoons of olive oil until hot. Add shrimp cooking on one side on high heat for 1 minute. While it cooks, sprinkle the uncooked side of shrimp with salt, paprika and italian seasoning. Flip the shrimp over, and cook on the other side and cook on high for 1 minute on high heat. Reduce heat to medium, flip shrimp over a couple of times to be sure the seasonlings are all over the shrimp. Cook the shrimp until it turns pink in color, usually a few minutes. Remove shrimp from pan and keep shrimp warm.

2. To the same pan but without shrimp, add chopped tomatoes, garlic and half of the bacon and pepper flakes if desired. Mix everything and cook for 1 minute on medium heat.

3.Add half and half and bring to boil. When it boils, add parmesan and stir. Once it begins to melt on medium heat, continue stirring until a creamy white sauce is mixed. Reduce heat to low and add the spinach. Cover and simmer on low heat for about a minute. Continue simmering until spinach has wilted.

4. In a separate large pot of boiling water, add pasta and cook it according to instructions. Drain pasta.

5. Add cooked pasta to the skillet with the sauce, stir everything. Add shrimp and remaining half of bacon to the skillet. Season with more salt and red pepper flakes if necessary. To serve, top the pasta with grated parmesan cheese
