3 1/2 cups Rice Chex cereal crushed to 1 cup
7 T butter melted
1/3 cup and 6 T sugar
1/3 cup flaked coconut
2 cups (1 pint) vanilla ice cream, softened
2 cups (1 pint) orange sherbet (softened
3 egg whites (room temperature)
1/4 tsp cream of tartar
1/2 tsp. vanilla

Preheat oven to 350º. Butter 9-inch pie plate. Place Chex crumbs in shallow baking pan. Bake 10 minutes or until lightly browned. In small bowl combine melted butter and 1/3 cup sugar. Add toasted crumbs and coconut, mix well. Press firmly into bottom and sides of pie plate: Set aside.

In large bowl of electric mixer combine ice cream and sherbet using low speed until thoroughly blended, but not melted. Pour into crust. Place in freezer while preparing meringue.

In small bowl, with electric mixer, beat egg whites with cream of tartar and vanilla until soft peaks form. Gradually add remaining 6 tablespoons sugar. Beat until stiff peaks form. Spread meringue over filling, carefully scaling to crust. Freeze overnight. To serve, bake in preheated 475º oven 2 to 2 1/2 minutes or until meringue is slightly browned. Serve immediately.
