⅓ Cup Olive Oil
Salt & Pepper to Taste
1 tbsp. Hot Sauce
1 lb. Boneless Chicken Breast (Cubed)
6-8 Medium Red Skin Potatoes (Cubed)
1 lb. Bacon (Fried & Crumbled)
2 Cups Shredded Cheddar Cheese
Directions:

Spray 9x13 inch baking dish with nonstick cooking spray. Mix oil, spices and hot sauce. Add chicken and potatoes. Stir to coat. Place in prepared pan and bake 55-60 minutes at 400º. Stir every 20 minutes. Top with bacon and cheese. Bake 5 minutes.
