2 sheets graham crackers (or 2 cups graham cracker crumbs)
1/4 c. sugar
8 T. butter, melted
2 (8-oz) packages cream cheese, at room temperature
1 (14-ounce) can sweetened condensed milk
Juice from 1 lemon (about 2 tablespoons)
Splash Vanilla Extract

Directions:
Put graham crackers in a food processor and process until fine crumbs form. Alternatively, you can put the crackers in a large resealable plastic bag and crush them with a rolling pin.

Stir together graham cracker crumbs, sugar and butter. Mixture should resemble wet sand. Firmly press the mixture into one 9-inch or a 10-inch springform pan, covering the bottom and 1 to 2 inches up the side. Place in the freezer while you begin to make the filling.

In bowl, beat cream cheese until smooth. Beat in condensed milk until thoroughly combined, scraping sides of bowl as needed. Beat in lemon juice and splash of vanilla.

Pour filling into prepared crust. Cover with plastic wrap and refrigerate until firm, at least 3 hours.When ready to serve, run a knife between cheesecake and pan. Unclasp sides and remove cheesecake.Serve with fresh berries or any topping of your choice.
