Cookie:

1 c. butter
⅓ c. powdered sugar
1 egg
1 t. vanilla
¾ t. almond extract
2 c. flour
1 3.4oz pistachio instant pudding
½ c. mini chocolate chips
2 c. finely chopped pecans

Filling:

4oz. cream cheese
½ t. vanilla
¼ c. powdered sugar (can use less if you like it less sweet)
1-2 T. heavy cream (just to get the consistency you desire)

Chocolate top:

1 c. semi sweet chocolate chips
1 T. coconut oil

Directions:
Directions:
Cream butter and sugar. Beat in egg and extracts. Combine flour and pudding mix and add to creamed butter. Stir in chocolate chips. Roll into 1" balls and roll in pecans (I just put the nuts in the mix, but you can get all fancy and roll them). Make a thumbprint. Bake at 350º for 10-12 min.

Add filling to cookies after they are COMPLETELY cooled. Then add your chocolate to the top. Enjoy!
