2 lbs ground beef
1 lge onion
1 tbsp salt & pepper
1 tbsp onion powder
1 garlic clove, minced (optional)
½ breadcrumbs
1 can tomato soup, divided
2 eggs

Directions:
Directions:
Preheat oven to 350º. Mix all ingredients together, using only ½ the tomato soup. Form meatloaf in a large loaf pan. Bake in oven for 30 minutes. While baking, prepare remaining soup with ½ cup of milk and ½ cup water. Take meatloaf out of the oven and pour tomato sauce over meatloaf and continue to bake 1½ to 2 hours.

This meatloaf was the ultimate comfort food for a large family...my mother cooked for an Army! My father on the other hand, did not have the acumen for simple meatloaf...ask my siblings when my mother was not available (having babies) to make this meal!
