Ingredients:  
1 stick butter
diced onions
slivered or sliced almonds
1 cup rice

4 cups chicken broth
1 T. lemon juice




4 small cans mushrooms

Directions:
Directions:
Stir and brown rice, onion and almonds in butter. Stir in chicken broth and lemon juice.
Bring to boil, reduce heat, cover and cook for 20 minutes. Stir in mushrooms and heat for another 5 minutes.

I rarely make this even though it is one of my favorite comfort foods that I looked forward to at family gatherings. It makes enough for a crowd!
