1 tbsp vegetable oil
1 c onion, chopped
2 cloves garlic, finely chopped
2-10oz cans cream of chicken soup
1-10oz can chicken broth
1 round tbsp diced green chilies
½ tsp ground cumin
½ tsp oregano, crumbled
½ tsp salt
½ tsp freshly ground pepper
⅛ cayenne
1 c light sour cream
10- 8 inch flour tortillas, halved
4 c chopped, cooked chicken breast
2 c shredded cheddar cheese
½ c sliced black olives
Sliced green onions and diced tomatoes

Heat oil in large saucepan over medium heat. Add onion and garlic. Saute for 2 min. Stir in next 8 ingredients (soup through cayenne pepper). Bring to boil, stirring frequently. Remove from heat, stir in sour cream, and let cool. Remove 1 cup of soup mixture, reserving it to top the casserole. Spread one cup of soup mixture over bottom of a greased 9x13 baking dish. Place 5 flour tortilla halves on top. Sprinkle with one cup chicken. Top with half a cup cheese and 2 tbsp of olives.
Repeat layering 3 more times with remaining soup mixture, tortilla halves, chicken, cheese, and olives. Spoon reserved soup mixture over top. Bake uncovered @ 350 for 35-40 minutes or until bubbly and heated through. Let stand 5 minutes before serving. Garnish with green onions and tomatoes.
