1 yellow cake mix
5 eggs
1/2 cup oil
1/2 cup sugar
1 tsp pure almond extract
8 oz sour cream
3 1/2 ounce can coconut
1 cup of chopped pecans
1 stick butter
3 tbsp brown sugar
1 tsp pure vanilla extract

Glaze (Optional)
2 cups powdered sugar
1/3 cup butter
1 tsp pure almond extract
2 tbsp hot water

Directions:
Directions:
Cream together butter & sugars. Add oil, eggs, sour cream & extracts. Mix well. Add dry cake mix and mix well. Fold coconut and pecans into mixture and mix well. Pour into a greased & floured bundt pan.

Bake at 350* for 1 hour.

Glaze: Melt butter over low heat. Blend in sugar and extract. Stir in hot water. Pour over cooled cake.

This recipe was from Dot Gilbert Latiolais. I have no clue who Irma was but it's a great cake. It was the favorite of Joe's co-workers in New Orleans. I baked this cake for the nurses at Our Lady of Lourdes while mom was ill. When I got to the hospital the following day she had promised one to a nurse for her child's birthday. I was tired but had to start baking that evening when I returned to mom's house. Next morning a little man knocked on our door and said "I'm here for the "CAKE" It was my only attempt at being a professional baker but of course I did not get paid!
