Ingredients: 2 T. olive oil 1 lb. tomatillos 2 medium onions, chopped 1-2 jalepeno peppers, finely diced (include seeds for more heat) 1-2 cloves garlic, minced 2 bell peppers, chopped (can be green, yellow or red) 1-2 4 oz. can diced green chiles 1 lb. ground turkey 1-2 T. cumin 1 tsp. oregano 1 tsp. cayenne (more if you like it hot) 2 15 oz. can chickpeas 1 c. pico de gallo 4-6 c. chicken broth, to desired thickness
Garnishes: Cilantro leaves Diced red onion Shredded cheese Sour cream Shredded lettuce

Directions:Bring large pot of water to boil. Peel dry husks from tomatillos. Score an "x" on the bottom of each tomatillo and place in boiling water for 1 minute to blanche. Drain tomatillos and place in blender or food processor. Pulse until roughly chopped.
Heat oil in skillet until hot. Add onion, peppers, garlic until onion translucent. Push onion and pepper mix to sides of pan; add ground turkey. Coat ground turkey with spices and salt and pepper. Cover and cook until turkey cooked through. Break up into small pieces. Add tomatillos, chiles, pico de gallo, chickpeas. Allow to cook until tomatillos start to soften (will release water). Add chicken broth to desired thickness.
Garnish with onion, cheese, sour cream, lettuce, cilantro as desired. |
