8-10 lb.turkey (feds 10-12)
salt
pepper
melted butter

If frozen thaw 2-3 days in refrigerator.
Remove neck and giblets from turkey. Cook in 4 cups of water and boil until tender. Use broth in dressing.

Preheat oven to 325º.
Wash turkey and pat dry. Be careful to clean sink and cabinet well!
Salt and pepper inside and out. Rub outside with melted butter.
Place on rack in roasting pan. Cover loosely with foil and cook for about 3 hours. Meat thermometer should reach 175º. Cook longer if needed. Juices will run clear.
Let stand 15-20 minutes before carving.
