4 T. butter
1 large onion-diced
3 carrots, peeled and chopped
2 stalks celery-chopped
2 T. fresh tarragon-minced or 2 t. dried tarragon
4 T. flour
4 cups chicken broth
1 1/2 cups cooked wild rice
1 1/2 cups cooked, chopped chicken
1/2 cup cream

Directions:
Directions:
In large pan, melt butter and add onion, carrots, and celery. Saute 5 minutes. Add tarragon and cook an additional minute. Sprinkle flour over vegetables and stir in. Cook 2-3 minutes, stirring frequently, then stir in broth. Bring to boil and turn down heat and simmer until vegetables are tender.
Stir in wild rice and chicken. Simmer another 10 minutes. Stir in cream and season to taste with salt and pepper.
