Triple Ginger Cookies Recipe

2 c flour
2 tsp ginger
2 tsp baking soda
1 tsp each cinnamon and cloves
1/2 tsp salt
1 c packed brown sugar
1/4 c butter, softened
1/2 c shortening, softened
1 egg
1/4 c molasses
1/2 tsp vanilla
1/2 c finely chopped crystalized ginger
1 tbsp. grated fresh ginger
sugar and grated fresh gingerr

Combine flour, ginger, soda, cinnamon, cloves and salt in a bowl.

Using medium speed on mixer, beat together brow2n sugar, shortening and butter until fluffy.Aed egg, molasses and vanilla and beat untill blended.

Gently stir in crystaleized ginger and fresh ginger. Cover and refrigerate dough for about 1 hour.

Shape into 1" balls (I use a small scoop). Roll in sugar and fresh ginger mixture and place 2" apart on lightly greased or parchment lined cookie sheet.

Bake at 350 for 12-14 minutes, or until cookies are just cracked on top. they will be soft to touch so try not to overbake. Cool for a few inutes and transfer to cooling racks to cool completely.

These are another cookie that I made for the coffee shop by Karie's store. They are delicious with the chunks of ginger in them. I usually put a few chopped pieces of ginger on top as well.
