1 Cup (2 sticks) butter
1¼ Cups firmly packed brown sugar
2 Eggs
½ Teaspoon vanilla
1¼ Cups flour. (all purpose)
⅔ Teaspoon ground cinnamon
1 Teaspoon baking soda
½ Teaspoon salt
3 Cups oats (quick cooking)
1 Cup raisins and or nuts

Directions:
Directions:
Heat oven to 350ºF. Beat butter and sugar together till fluffy, add eggs and vanilla, mix well. Combine flour, soda , salt and cinnamon together. Add both mixtures together. Stir in oats, raisins and or nuts. Put in refrigerator over night. (I like to roll the batter into a log shape so I can cut the cookies in the morning and bake).

Bake for 8-12 minutes or. until light golden brown. Store tightly covered Makes 4 dozen small cookies.

Watch carefully and don't overcook these cookies. They will get to crip and lose their chewy taste. If you like crisp. bake longer.
