2 cups flour
2 cups sugar
1 t. baking powder
1 t. baking soda
1 t. ground cinnamon
3 cups finely shredded carrots
1 cup oil
4 eggs

Directions:
Directions:
Combine flour, sugar, baking powder, baking soda, and cinnamon. Add carrots, oil and eggs.
Beat with electric mixer until combined. Pour into 2 greased and floured round cake pans.
Bake at 350 for 30-35 minutes.
Top with favorite cream cheese icing.

This is one of the best cakes ever! Moist and delicious, you can feel less guilty eating dessert since it is loaded with carrots! I have made by substituting zucchini for the carrots, and added 2 T. of cocoa for a great chocolate cake.
I love the 2 layers with cream cheese icing in between,on top and sides-but you can also make in a
9 x 13 pan.
