Directions:APRICOT FILLING: Place dried apricots in small saucepan and pour in just enough water to cover. Boil until apricots are soft. Don't let all the water evaporate. Add a little bit more to keep from burning, if needed. Smash apricots. If too runny, return to stove and continue to cook.
FOR PASTRY DOUGH: Sift flour and salt together in a med. bowl and set aside. Beat cream cheese and butter together with a mixer until completely mixed and creamy (3-5 min) Reduce the speed of mixer and slowly add in the flour. The dough will be soft but not sticky. Divide the dough into 4 equal parts and flatten each to 3/4" thick. Wrap in plastic wrap and refrigerate until hard, at least 2 hours.
ASSEMBLING COOKIES: Pre heat oven to 375º. Move the oven rack one setting higher than the center. Take one of the disks of dough from the refrigerator and lightly flour both sides. Spread sugar on work surface. (Mom omitted this step). Place the dough on top and roll out to 1/16 to 1/8" thick. With sharp knife, trim the dough into a square and cut into 16 smaller squares. (about 1 1/2" square) Place a dollop of filling into the center of each square. (1/2 to 3/4 tsp) Gently grab two opposite corners and fold one over the other, gently pressing down to try and seal them together. Gently move it to a parchment covered baking sheet. Repeat with all remaining squares, placing the cookies no closer than 1" apart. Bake 12-14 min or until the bottom edges are a golden brown and you can smell them. Let cool slightly on pan and then move them gently to wire rack to cool completely. Repeat with remaining dough. |

Notes: Apricot cookies are a staple of Mom's Christmas cookie recipes. But, I haven't found her original recipe. And I am so sad about that! After searching the internet, I think this recipe is very close. Though I am not sure she added sugar to the apricots. Her cookies were filled with actual formed apricots and not preserves or jelly. I think she may have just cooked apricots with water only.
