1 1/4 lb Large Shrimp (26-30 count, tails removed)
1/4 tsp Table Salt
1 C V-8 Juice
1/2 C Ketchup
3 Tbsp Lime Juice (2 limes, plus 1 additional lime for cut wedges)
2 tsp Hot Sauce (Cholula or Tapatio, avoid Tabasco)
1/2 English Cucumber (diced into 1/2 pieces)
1 C Red Onion (finely chopped)
1 Avocado (also cut into 1/2 inch pieces)
1/4 C Cilantro (chopped)

Bring 3 cups of water to a boil over high heat. Add shrimp and 1 tablespoon of salt to the pot. Cover and remove from heat until shrimp are opaque (5 minutes). Shake lidded pot half way through cooking process to move the shrimp around. Transfer cooked shrimp to an ice bath and let them cool 3-5 minutes. Once cool, cut each shrimp into three pieces.

In a medium bowl, combine V-8, hot sauce ketchup and salt and combine. Then add cucumber, onion and shrimp and stir to evenly coat. Then add avocado and cilantro and stir lightly as not to break up the avocado.

You can serve them in one large bowl or divide them into four smaller bowls to be served separately. Serve with chips/crackers, lime wedges and extra hot sauce.
