4 whole boneless Chicken Breasts skinned and halved
1 C Chicken broth
4 lbs New Potatoes washed with skin on
1 C Sour Cream or Low Fat Plain Yogurt
4 oz Goat Cheese
1 C minced fresh Parsley
1 T ground Black Pepper
10 Sun Dried Tomatoes diced
1/2 C minced fresh Chives

Directions:
Directions:
Cook chicken in broth. Save broth in refrigerator for later use.

Place potatoes with 1/2 C water in covered casserole and cook in microwave 12 - 15 minutes.

Let stand 10 minutes, drain, cool, and cut in quarters.

In large mixing bowl combine sour cream and goat cheese. With fork mix together well.

Add chicken, potatoes, parsley & fresh pepper; toss to combine.

Refrigerate covered for at least 1 hour. Before serving sprinkle with tomatoes and chives. 8 servings 2 hrs prep
