1 medium onion
2 T. butter
5-6 medium potatoes, peeled and cubed
½-1 carrot, peeled and diced
4 cups water
4 chicken bouillon cubes
1 tsp. garlic powder
2 tsp. salt
1 tsp. pepper
2 cups evaporated milk or heavy cream (can use regular milk)

Directions:
Directions:
Saute onion in butter in large boiler until tender. Add next 6 ingredients; cover and simmer about 20 minutes until vegetables are tender. Remove from heat, and mash some of vegetables with potato masher. Add milk and let come to boil to thicken, stirring constantly.

I usually crumble bacon and cheese on top. You can also add some red chili pepper for a kick.
