1 ¾ cups all-purpose flour
1 ½ cups sugar
1 t. baking soda
½ t. salt
2 eggs
2 medium ripe bananas, mashed (1 c.)
½ c. canola oil (or applesauce - unsweetened)
¼ c. plus 1 T. buttermilk
1 t. vanilla extract
1 c. chopped walnuts (or pecans)

Directions:
Directions:
In a large bowl, stir together flour, sugar, baking soda and salt. In another bowl, combine the eggs, bananas,oil, buttermilk and vanilla; add to flour mixture, stirring just until combined. Fold in nuts.

Pour into a greased 9-in. x 5-in. loaf pan. Bake at 325º for 1-¼ to 1-½ hours or until a toothpick comes out clean. Cool on wire rack.

Yield: 1 loaf (16 slices)

Nutritional Facts: 1 serving (1 slice) equals 255 calories, 12 g fat (1 g saturated fat), 27 mg cholesterol, 166 mg sodium, 34 g carbohydrate, 1 g fiber, 4 g protein.
