6-8 Fresh salmon fillets, skinned (4-5 oz. each)
1 cup dry white wine, can use non-alcoholic
1/2 cup butter melted
1 cup sour cream
1/4 cup chives, finely chopped
1-2 T Pommery Mustard
1 T fresh parsley, finely chopped
1 tsp dill weed
1/8 tsp ground white pepper

In a glass shallow baking dish, place the salmon fillets and pour the wine over all. Let the fish marinate in the wine for 15 minutes prior to broiling. Remove the fish and pat dry on paper toweling. Brush both sides of each fillet with the melted butter, then place on a broiling rack. Broil, second rack down, under a preheated broiler, 5-7 minutes, depending on thickness of salmon. During the broiling period, prepare the sauce by combining the remaining ingredients, stirring well to blend. Spread over the fillets about 2 minutes before removing from the over. The sauce can also be served col on the side.
