½ c. tapioca
1 c. + 3 c. water or fruit juice
1 c. sugar
Pinch of salt

Directions:
Directions:
Soak tapioca in 1 c. water or fruit juice. Bring 3 c. water or fruit juice to a boil in saucepan. Stir in soaked tapioca. Simmer approximately 20 minutes, stirring often. Add approximately 1 c. sugar and salt. Stir several times while cooling.

For variations: Use water to cook then add 1 c. crushed pineapple or other fruit, or, add 1 - 3 oz. pkg. fruit flavored gelatin as soon as taken from the stove. Very good with orange Jell-O and mandarin oranges. Serve topped with whipped cream.
