½ c. tapioca
1 c. + 3½ c. milk
1 c. sugar
A pinch of salt
1 egg
1 tsp. vanilla or desired flavoring

Directions:
Directions:
Soak tapioca in 1 c. milk for 1 hour or more. Bring 3½ c. milk to a boil. Stir in soaked tapioca and simmer over low heat for 20 minutes, stirring often. Add ½ c. sugar and salt while simmering. Beat until light and fluffy, 1 egg, then beat in ½ c. sugar and add to hot mixture, blend well. Add vanilla or other flavoring. Chill before serving.
