6 Thick cut center cut pork chops with center pocket
2 T butter
1/2 cup celery (with leaves) thinly sliced
1/2 cup onion, finely chopped
2 T fresh parsley, finely chopped
1 tsp Marjoram
1/2 tsp poultry seasoning
Salt and fresh ground pepper, to taste
2 cups Pepperidge Farm seasoned bread cubes
2 T chicken broth
Garlic pepper, to taste
1/4 cup Chicken broth
1 T Juniper Berries, crushed
4-6 cups chunky style apple sauce

Lay out the chops prepared as indicated In a medium-size skillet, melt the butter over a medium heat, then add the celery onion, and parsley. Let this mixture sauté just until the onion is tender crisp, then remove from the heat and place in a medium-size mixing bowl. Add the next 5 ingredients, stirring well. Slowly stir in the broth. Stuff each chop pocket and secure with a kitchen pick. Sprinkle the stuffed chops with garlic pepper to taste. Heat a large skillet, adding just a small amount of olive oil. Add the chops and sear, browning on both sides (turn carefully), then reduce the heat and add the other 1/4 cup of broth and crushed juniper berries. Serve each with a cup of apple sauce or a couple of spiced crab apples and just about any vegetable and side dish.
