1/2 pound ground beef
8 ounces bacon
1-10 ounce can diced tomatoes with green chili peppers
8 ounces cream cheese, cut into cubes
8 ounces shredded Cheddar-Jack cheese
2 Tablespoons fresh parsley, chopped or dried parsley

Directions:
Directions:
Preheat slow cooker on low. In large skillet cook bacon over medium-high heat, turning occasionally until evenly browned, about 10 minutes. Remove bacon to a plate lined with paper towels, reserve drippings in the skillet. In skillet cook ground beef until completely browned. Drain the fat and return the skillet to the stove, reduce heat to low. Stir in diced tomatoes, cream cheese and shredded cheese into ground beef until mixed. Crumble bacon and set aside three teaspoons for garnish. Add bacon to hamburger mixture and stir until cheese begins to melt. Transfer to slow cooker and cook on low until hot and bubbly, approximately 2 to 3 hours. Stir parsley into dip. Garnish with reserved bacon. Serve warm. Refrigerate leftovers.
