4 large Eggland's Best Eggs, hard boiled
2/3 cup chopped celery
1/4 cup Chopped Green Pepper
1/4 cup chopped onion
1/4 cup low fat mayonnaise
1 T low fat plain yogurt
1/2 tsp Dijon Style Mustard
2 tsp vinegar (cider or white)
1/4 tsp salt
Dash white pepper

Chop the eggs into large pieces. Add all of the ingredient together and mix well. Serve equal portions on top of lettuce leaves.
