3 Roma tomatoes, seeds removed and diced
2 ripe avocados, diced
1-15 ounce can black beans, rinsed and drained
1-15 ounce can black eyed peas, rinsed and drained
1 1/2 cups frozen corn
1 bell pepper, diced
1/3 cup red onion, diced
2 jalapeno peppers, chopped fine
1/2 cup cilantro, chopped

Dressing:
1/3 cup olive oil
2 Tablespoons red wine vinegar
2 Tablespoons lime juice
1 teaspoon sugar
1 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon garlic powder

Directions:
Directions:
Prepare all vegetables as directed and place in large mixing bowl. Prepare dressing by adding oil, vinegar, juice, sugar and salt together and stirring until well mixed. Pour dressing over vegetables and gently stir so everything is covered with dressing and mixed well. Cover and refrigerate. Serve with tortilla chips.
