1/4 liter water (the asparagus cooking water)
200 g fresh asparagus, green or white
30 g butter
1 tbsp flour
1/8 liter heavy cream
2 egg yolks (optional)
salt, nutmeg, pepper to taste
chopped chives
1 cube instant vegetable broth, or 1 tbsp
splash of white wine

Directions:
If you use white asparagus peel first, then cut off hard parts. Green asparagus: cut off the hard parts.
Cut asparagus in pieces and cook in water until soft.
In a pan melt butter, add flour. Whisk until butter and flour is combined (don’t let it become brown).
Fill up with asparagus water, add the vegetable instant broth. Let cook for 10 min.
Spice to taste, add heavy cream, white wine and if you use the egg yolks, don’t bring the soup anymore to a boil.
Sprinkle chopped chives on top.
