3 eggs
1 C. oil
1½ to 2 C. sugar
2 C. grated zucchini do not peel
3 tsp. vanilla
3 tsp. cinnamon
1 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
3 C. flour
½ C. chopped nuts
1 small can crushed pineapple drained (optional)

Directions:
Directions:
Beat eggs until foamy and mix with oil. Stir together sugar, zucchini, vanilla, and cinnamon. Then add salt, baking soda, baking powder, flour, and chopped nuts. Bake in 2 loaf pans for 1 hour to 1 hour 15 minutes at 325º.
