Ingredients: 1 Med Egg Plant diced 1 large Onion diced 1 cup green, red, yellow, or Orange peppers diced 2 cloves of Garlic diced and crushed 1 - 4 oz. can Mushrooms (or 1 cup fresh) diced 1 large Zuchinni Squash diced 1/3 cup Olive Oil Additional ingredients for below...
1 tsp. Salt ½ tsp Pepper 1- 6 oz. can Tomato Paste ¼ cup water 2 T. Wine Vinegar ½ cup Green Olives and/ or ½ cup Black Olives diced
Simmer above items together in a cover pot for 15 min. Add second set of ingredients
Combine first set of ingredients, with vegetables and simmer 25 minutes, covered. Serve with crackers, Italian bread, or with Rice as a Main Course. I sometimes use more peppers of all the colors for a variation. You can also add any other vegetable that you wish.

Directions:Spanish Rice 4 slices bacon diced 1 med. Onion diced 1 cup diced mushrooms 1 cup diced peppers (red, green, or yellow)
3 small cans tomato sauce ½ tsp Oregano 1 tsp. garlic Powder ½ tsp Pepper.
If I have leftover tomato gravy I add a cup. 1 pkg. instant Rice (Uncle Bens). Brown in frying pan: 4 slices bacon diced, 1 med. Onion diced, 1 cup diced mushrooms, 1 cup diced peppers (red, green, or yellow). Add 3 small cans tomato sauce, ½ tsp Oregano, 1 tsp. garlic Powder, and ½ tsp Pepper. If I have leftover tomato gravy I add a cup. Simmer with lid for ½ hour. Cook 1 pkg. instant Rice (Uncle Bens). Add to tomato mixture (place in center, rice tends to soak up all tomato sauce) , cook ½ hour, then stir together and serve. |
