1 large can whole sweet potatoes
1 ¼ cup brown sugar
1 ½ tbsp cornstarch
1 tbsp grated orange peel
1 can apricot halves
1/8 tsp cinnamon
¼ tsp salt
2 tbsp butter
½ cup pecan halves

Directions:
Directions:
Place potatoes in greased baking dish. In saucepan, combine sugar, cornstarch, salt, cinnamon, and orange peel. Drain apricot syrup into sugar mixture and cook over medium heat, stirring constantly, until boiling. Boil 2 minutes. Add apricots, butter, and pecans, and pour over potatoes. Bake at 375 for 25 minutes.
