Crisco for shallow frying
2 cups buttermilk pancake mix
1/4 cup sugar
1 cup milk
1 egg
Cinnamon and sugar or confectioners sugar

Directions:
Melt enough Crisco in skillet to make a 1" deep layer; heat to 365º
Meanwhile combine pancake mix and sugar. Add milk and egg; stir just until pancake mix is moistened. At once drop a few at a time into hot Crisco. Brown doughnuts on both sides; then drain on paper towels.

Shake doughnuts in bag with cinnamon and sugar or confectioners sugar.
