2 cups mashed potatoes
1 cup sugar
1 1/3 cups shortening
2 T salt
12 cup flour
6 eggs
1/2 tsp vanilla
1/2 T lemon extract
1/2 T nutmeg
4 T yeast
4 cups milk

Glaze:
1 pkg powdered sugar
1 tsp vanilla
1 cup hot water

Doughnuts:
Mix while soaking the yeast in 4 cups milk scalded and cooled to lukewarm. Add yeast and milk to first mixture. Add 12 cups flour or more so it's not sticky (but soft). Knead for 10 minutes and let stand for 15 minutes. Roll out 1/4 to 1/2" thick. Let raise on floured cloth for 1 to 2 hours or double in bulk. Cook in oil in deep fat fryer 350º or 400º Look in center for golden brown color then turn over. Drain on paper towel until oil is absorbed then dip in glaze, (don't leave in glaze).

Glaze:
Add water gradually until it's the consistency you want.
