1 lb spinach
4 eggs
4 slices of bread
6 tbsp parmesan or romano cheese
1 1/2 tsp salt
3/4 tsp pepper
2 garlic cloves
1 1/2 lb ground beef
1/2 lb ground pork
1 large onion
1/2 c consumme
1/2 tsp oregano
3/4 c red wine

Directions:
Cut up washed and towel dried spinach removing course stem. Cook in covered sauce pan until limp. Drain any excess water from spinach. Beat the eggs thoroughly, then to eggs add spinach, shredded bread, cheese and salt and pepper and mix thoroughly. Add pork, beef and minced onion and minced garlic. Mix egg mixture and these ingredients thoroughly. Shape mixture into small balls. Put 3 tbsp butter in fry pan. Add balls coated in flour, salt and pepper and brown. Transfer to slow cooker. Pour 1/2 c consumme and 3/4 c of red wine into fry pan with oregano. Add 2 c sliced mushrooms. Boil for 3 minutes. Pour over meat balls. Cook in slow cooker for 2 hours at 200ºF or low setting. Serve over ric or noodles. Sprinkle with chives when serving.
