1 cup sugar
2/3 cup mashed pumpkin
1 teaspoon lemon juice
Three-quarter cup flour
1 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon cinnamon
1 teaspoon pumpkin pie spice
1/4 teaspoon nutmeg
1 cup chopped pecans
1 tablespoon powdered sugar
One 8 ounce softened cream cheese
1/3 cup softened butter
1 cup powdered sugar
1 teaspoon vanilla

Grease and flour a 15 x 10 x 1” jellyroll pan. Gradually add sugar two eggs and beat five minutes. Stir in pumpkin and lemon juice. Combine flour and next five ingredients and I had to pumpkin mix.
Spread better into pan. Sprinkle with pecans, gently pressing into batter. Bake at 375° for 12 to 15 minutes. Sprinkle 1 to 2 tablespoons powdered sugar onto Rectangular towel. When cake is done loosen from sides of pan and turn onto Sugar’d cloth. Starting at narrow and roll up cake and towel together and cool on a wire rack, seam side down. Beat cream cheese and butter on a high speed,
Gradually add 1 cup powdered sugar and vanilla beating until blended. And roll cake and spread with cream cheese mixture. Carefully re-roll and placed on plate seem side down. Can garnish with pecans and whip cream
