1 1/2 c flour
3/4 tsp xanthan gum, if not in your flour
7 Tbsp cocoa powder
1 1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp cream of tarter
1/4 tsp salt
1/2 tsp nutmeg
2/3 c light brown sugar
4 Tbsp butter melted and cooled
4 Tbsp canola oil
2 extra large eggs, lightly beaten
1 1/2 tsp vanilla
3/4 c + 2 Tbsp heavy cream at room temp
2-4 tsp milk

Heat your doughnut maker or 350º and grease a doughnut pan.
In a large bowl, put flour xanthan gum, 6 Tbsp cocoa, other dry ingredients. Whisk well. Add wet ingredients one at a time. Mix after each addition.
Fill doughnut wells 3/4 full. In oven, bake 10 minutes, or until set.
While baking, make glaze. Mix confectioners' sugar, 1 Tbsp cocoa and 2 tsp milk. Add more milk by 1/2 tsp until smooth, but thickly pourable. Dip tops of slightly cooled dougnuts. Allow to set on parchment paper.
