cornbread and biscuits crumbled
1 onion chopped
2 tbsp. (give or take) of sage or poultry seasoning
2 tsp. garlic
black pepper and salt to taste
2-4 cups chicken broth

Directions:
Directions:
Preheat oven to 350º.
Cook onion slightly in skillet and add to bread crumbs. Add sage, garlic, salt, and pepper. (You can add a little then taste - or have grandpa test! then add more if needed.)
Pour in chicken broth heated. You can use store bought or cook the giblets and neck from turkey in water with added butter (½ stick) and a little salt.The bread will soak up a lot. Add some, stir then let set and add more as needed. It will dry as it bakes so needs to be kind of wet.You can pour more broth over it if is baking real dry.
Bake for about 1 hour.

Sometimes I put a carrot, a stalk of celery and a whole onion in the pan when I make the broth with the giblets and neck. You can pull some of the fat from around the tail and cut the tail off and put it too.
